Salmon, Chickpea and Veg Parcels


·      2 salmon fillets
·      1/2 lemon, cut into 2 wedges
·      4 heaped tablespoons chickpeas
·      1 large handful asparagus
·      1 large handful tenderstem broccoli
·      1/4 teaspoon dried basil
·      Salt and pepper to taste (optional)
·      4 small knobs butter


1.    Pre-heat oven to 200 degrees C. L

2.  ine a baking tray with two sheets of foil large enough to take half of the ingredients above and be wrapped up.

3.   Split the ingredients above in half, and distribute evenly onto each of the foil sheets in the order as follows: asparagus, broccoli, salmon, chickpeas, lemon, salt, pepper, basil, butter.

4.  Bake for 20-25 minutes on the middle shelf, open up and serve. So blinking easy. So blinking tasty.
