SPINACH SALAD WITH MOZZARELLA, TOMATO AND PEPPERONI


Healthy and easy to cook, Spinach salad is perfect for quick lunch





































INGREDIENTS

3 cups baby spinach, roughly chopped
1/2 lb (220g) mixed cherry or grape tomatoes (red and orange), halved
1/2 small red onion, minced
1 1/2 cup diced Mozzarella, or fresh Mozzarella balls
Chopped Pepperoni or salami slices, to taste
The dressing
1/4 cup olive oil
Juice of 1/2 lemon (or white wine vinegar)
A pinch of salt
1/2 teaspoon Italian seasoning























DIRECTIONS

1. In a mason jar, combine the ingredients for the dressing: olive oil, lemon juice (or white wine vinegar), salt, and Italian seasoning. Shake vigorously.

2. In a salad bowl, combine spinach, pepperoni, tomatoes, red onion, and Mozzarella. Sprinkle with cracked pepper and drizzle with the dressing. Toss the salad to combine. Serve the spinach salad immediately or chill before serving. Enjoy!
