Butter Tart Banana Monkey Bread

1 cup brown sugar
½ cup corn syrup
¼ cup unsalted butter, melted, plus more for pan
2 large eggs
2 tsp distilled white vinegar
2 tsp vanilla extract
½ tsp salt
2 (17.5 oz) pkgs refrigerated canned cinnamon bun dough
2 ripe bananas, peeled and cut into 1/2"-thick rounds


1. Preheat oven to 375ºF. Grease a Bundt pan with a bit of butter.
2. In a large bowl, mix brown sugar, corn syrup, butter, eggs, vinegar, vanilla and salt. Pour 1/3 of brown sugar mixture into prepared pan. Reserve remaining 2/3 of mixture.
3. Cut the cinnamon bun dough into 2-inch pieces and roll each piece into loose ball.
4. To bowl of reserved brown sugar mixture, add dough balls and bananas and stir to evenly coat. Transfer dough and banana mixture to pan.
5. Bake until golden brown on top and baked through, about 40 minutes.
6. Cool for 10 minutes in pan, then invert pan to release monkey bread. Serve.
